What we have going on here is delicious, super crispy IT Isn’t Chicken Fingers tucked in between smashed avocado and a cabbage slaw topped off with grated cheese. Oh what a party in the mouth!

Ingredients:

Thinly Chopped Purple and White Cabbage |

Thinly Chopped Carrot |

Parsley Coarsely Chopped |
For the Guacamole:

Ripened Avocado |
1 Tablespoon |
Extra Virgin Olive Oil |
1/3 Cup |
Finely Chopped Onion |
1/3 Cup |
Finely Chopped Tomato |
1/3 Cup |
Finely Chopped Capsicum |
1 Tablespoon |
Finely Chopped Cilantro |

Minced Garlic |

Lemon Juice |

Crushed Black Pepper |

Steps for Guacamole:
- Cut the avocado into two equal parts. Remove the ripe parts of the fruit with a spoon and transfer to a bowl
- Mash the avocado till pulpy
- Add in the rest of the chopped ingredients, salt, olive oil and lemon juice. Add the seasonings – salt and freshly crushed black pepper. Mix well and set aside
Steps for Taco:
- Fry the IT Isn’t Chicken Fingers following the directions on the packet
- Meanwhile, make the slaw by combining cabbage, carrot, parsley in a medium bowl. Add olive oil and 2 teaspoons lemon juice. Toss gently to combine.
- Fill up the taco shell withe the slaw.
- Layer the IT Isn’t Chicken Fingers above the slaw.
- Add a thick layer of the guacamole.
- Sprinkle grated cheese on the taco and garnish with the chopped parsley.
- Serve with some extra guacamole or sour cream and enjoy!
